- Green chili - 1 finely chopped (adjust to taste)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 tablespoon
- Red chili powder - 1/2 teaspoon adjust to taste
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro leaves - for garnish
- Water - as needed
Step 1: Prepare the Ingredients
Peel and dice the potatoes into small cubes.
Finely chop the onion, tomato, garlic, and green chili.
Grate the ginger.
Step 2: Saute the Aromatics
Heat oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add minced garlic, grated ginger, and chopped green chili. Saute for a minute until fragrant.
Step 3:Potato Preparation
After peeling and chopping the potatoes, it's essential to parboil them before adding them to the curry. Parboiling partially cooks the potatoes, ensuring they cook evenly and maintain their shape during the simmering process in the curry. To parboil the potatoes:
Place the chopped potatoes in a pot of salted boiling water.
